Q: "What's the big deal with KBs?" 

A:  KBs are cool.  There is no direct link between the force applied by your body and the bulk of the KB's weight.  There is a handle between these two points.  Since the handle is there, you have to use finesse to move KBs.  This "finesse" is usually created by your core to generate the momentum needed to move the KB properly. 

Because of this, more parts of your body (those involving the core) are used for each KB movement.  In general, more parts of your body which are required to complete movements = more overall fitness.    

Plus, overcoming the momentum while changing the direction of a swinging KB will (generally) add to your strength in ways that more direct movements like, DBs, BBs, machines won't.
